Arnold Eric Wong is again hitting the right note with his hot new restaurant, Bacar, a happening place of good food and a solid wine list. Meanwhile, his original Eos continues to deliver fine fusion cuisine with a tropical flair: in the salmon-tuna poke rolls with chili-lime dipping sauce, the chef might just be toying with the French tradition of puff pastry--here he gets away with a joke of his own: dumpling rolls that are as light as pastry, and salmon that is almost sushi-raw.
